María Lorena Galasso, is a leading specialist in cocoa, chocolatier and Tree & Bean to Bar Chocolate Maker. Her career began with studies in Visual Communication Design at the University of La Plata, which led her to found the agency “Entreideas” in 2004. In 2010, she entered the chocolate industry, founding “Las Romeas”, a brand of chocolates recognized for its avant-garde design and quality.

Galasso has deepened his knowledge of cocoa through trips to various cocoa-growing regions in Latin America, specializing in cultivation processes, post-harvest and chocolate production. He has created innovative brands such as Sabacacao and Amantheo, focused on cocoa sustainability and traceability, in addition to organizing educational programs such as “Cocoa from A to Z” and “Full Immersion in Cocoa Farms”.

Her work also includes advising new Bean to Bar factories and promoting cocoa consumption through events and collaborations with renowned chefs and restaurants. In addition, he has led research on cocoa genetics and processes, promoting the circular economy and the integral use of the cocoa fruit. His influence extends internationally, participating in fairs and events of high gastronomy, consolidating himself as a key figure in the world of chocolate.
